Ingredients :
250 g /8.8 oz           “Real Thai” dried glass noodles
100 g/3.53 oz           Shrimp, Squid, or Fish Meat
1                               Tomato, halved and sliced
20 g/ 3/4 oz              Celery stalk, chopped
20 g/ 3/4 oz              Chopped spring onion
1                               Onion, halved and sliced
50 g/ 2 oz                 Chopped green paper
5                               Small green chilies, finely chopped
2 Tasp                       Limes juice
2 Tasp                       sugar
1 Tasp                       crushed dried chilies
1/2 Tasp                    salt
2 1/2 Tasp                 vegetarian fish sauce or soy sauce

Cooking Instruction
1: Cook the noodles in boiling water for 3-4 minutes, then drain and rinse them under cold water to prevent further cooking.
2: Cut the noodles in to 12 cm/ 5 inch lengths. Return them to the pan and add all the rest of the ingredients. Mix thoroughly for 2 minutes.
3: Serve at room temperature, garnished with fresh coriander sprigs.
